Bountiful Parade






This was my first Bountiful Parade extravaganza. Pete's data announced the parade as usual. Phillip and I wore our matching tye-die outfits. :-)

Phillip LOVED the parade and every chance he could get he would run out in the middle of the street and wave his flags. He especially liked all of the cheerleader groups and dancing groups. Phillip started collecting his own candy and definately had a sugar high by the end of the night.

Having Fun in Utah!















Well, It's been a while since I've updated this blog. We've been BUSY! We moved to Utah end of April. We were able to sell our house in California. Both Pete and I are working right now. So far so good! Hopefully we'll find a house soon. :-)

Phillip is getting bigger and talking a lot. He likes to waddle around and make duck sounds. He's getting to know his cousins better. He likes to point at their pictures and tries and say their names.

I attached some funny pictures. The first is Phillip playing with his favorite toy: his personal DVD player. :-) He also had fun playing Piano with Pete at grandma and grandpas house.

Muir Woods






Pete wanted to show me some of the Redwoods. This is a park that is about 30 minutes outside downtown San Francisco. The trees were amazing. Most of them are over 700 years old. Good Pictures. Good Times. This is a great kid activity if you take the family to San Francisco. Phillip liked it a lot better than shopping in the city.

San Francisco

























I got a good deal on a hotel by Union Square and we were able to be on the Concierge level (free snacks at night and free breakfast in the morning). Wahoo! Phillip didn't like San Fran as much as Monterey. Pete ended up taking Phillip to the hotel and I got to go shopping by myself for about 4 hours. I didn't buy much (one new outfit and a pair of pocka-dot shoes) but it was great to shop without any time limits. YAY!

It turned out we were there during the Chinese New Year. We went to a Chinese Restaurant on "Chinese New Years Eve" and it was really busy. In china town they had the regular junk shops, but there were a lot of tents set up for gambling and selling knock-offs. (I got some knock-off sunglasses).

On our way out of the city we got a shot of the family by the "Full House" park. "Whatever happened to predictability, the milkman, the paperboy, the evening TV ... ooooaaaaa"

Monterey Aquarium







Phillip LOVED the fishes. My favorite were the jelly fish. It was so cool to watch with the lights and the classical music. There was a cute little cave where you could crawl behind some fish displays. Pete got a good picture of Phillip starring at the fish. We also got someone to take our picture by the Panguin display. Phillip didn't like it how I ran away from him. Poor little guy.

Pacific Coast Highway







We drove up Highway 1 from San Luis Obispo to San Francisco. It was a windy stretch of road but the views made up for it. Phillip loved the twisting roads and was cracking up like he was on a ride at Disney. I got a little seasick when we were winding over the cliffs with a 1000 foot drop into the ocean, but it was still pretty.

I took some pictures of the cows because it reminded me of the California Cheese commercial, "Happy Cows come from California." These cows were graising on a field right by the beach.

Chicken Tikka Masala



CHICKEN TIKKA MASALA
Chicken marinated in yogurt and spices and then served in a tomato cream sauce. Serve with rice or warm pita bread









INGREDIENTS

Marinade:
• 1 cup yogurt
• 1 tablespoon lemon juice
• 2 teaspoons ground cumin
• 1 teaspoon ground cinnamon
• 2 teaspoons cayenne pepper
• 2 teaspoons freshly ground black pepper
• 1 tablespoon minced fresh ginger
• 4 teaspoons salt, or to taste
• 3 boneless skinless chicken breasts, cut into bite-size pieces
• 4 long skewers

Sauce:
• 1 tablespoon butter
• 1 clove garlic, minced
• 1 jalapeno pepper, finely chopped
• 2 teaspoons ground cumin
• 2 teaspoons paprika
• Salt to taste (I didn't add any because of the salt in the marinade and the salt in the tomatoe sauce)
• 1 (8 ounce) can tomato sauce
• 1 cup heavy cream
• 1/4 cup chopped fresh cilantro (Garnish)

DIRECTIONS
1. In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.

2. Preheat a grill for high heat. ( I used the Forman Grill)

3. Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

4. Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

PITA BREAD

INGREDIENTS:
• 2 cups all-purpose flour
• 1 cup pastry flour
• 1 cup warm water (110 degrees F/45 degrees C)
• 1 teaspoon active dry yeast
• 1 tablespoon applesauce
• 1/2 teaspoon salt
• 1 1/2 teaspoons white sugar
• 1 tablespoon olive oil

DIRECTIONS:
1. Dissolve the yeast and sugar in the warm water.

2. Combine the all-purpose flour, pastry flour and salt in a bowl. Stir in the yeast mixture and applesauce and knead. Dough shouldn't be sticky, but it shouldn't be dry either. If too sticky add 1 tablespoon of all-purpose flour till you get the right consistency. If too dry, add 1 tablespoons of water at a time till you get the right consistency.

3. Roll out into a rope and cut into 8 pieces. Shape each piece into a ball and roll out till it's anywhere from a 6 to 8 inch circle

4. There are two ways to cook pita bread. The flavor is a bit different with both.

To Bake Pita:
Preheat oven to 500 degrees F (260 degrees C) and put a pita on a wire cake rack. Toss in the rack and cook for 3 minutes or until the bread stops puffing up. When you take it out, smash down the pita (Careful, its hot!) and quickly put it in a plastic freezer bag.

To Fry Pita: (I use this method. I spritz the pan with olive oil between cooking each pita. Has a great chared flavor.)
Heat olive oil in a skillet over high heat. When almost smoking, place a pita in the pan and cook for a few minutes on each side, till brown spots begin to appear. It should look something like a tortilla when you're done. Put in a plastic bag once it has cooled a bit.

RAITA

INGREDIENTS
1 cup plain yogurt
1 cup sour cream
3 cucumbers, seeded and chopped
1 tomato, seeded and chopped
1 teaspoon ground cumin
1/2 teaspoon paprika
4 cloves crushed garlic
salt and pepper to taste

DIRECTIONS
In a salad bowl, whisk together the yogurt, sour cream, cumin, paprika and garlic.
Add cucumbers and tomatoes; toss and chill before serving.

I'm Fantastic!



Well, this is what you get when you decide to 'work on the side' as a stay-at-home mom. There is an old couple in our ward and they were talking about needing help with their camcorder tapes. Someone that saw my Young Women slideshow recommended me. Well I got their number and gave them a call. It was a really old guy and he was a little hard of hearing. Knowing me and how I mumble on the phone, I don't think he really understood me. I researched online about 2 hours to figure out the best way to help him. I figured it would be easier if we had a DVD recorder. I offered to buy it from Walmart and have them pay me back. But, he was again flustered on the phone and wanted me to see the TV and all of his equipment. At this point he said, "I thought most TV people were guys, I never heard of a girl that knew about TV's." If he only knew...

Anywho, so I drive 8 miles to their house and come to the same conclusion that they need a DVD recorder. They follow me back to Walmart where I help them pick it out. We were waiting for the old guy to pull up the car so I decided I'd pick up some counter cleaner because we were out. As we check out the old lady says, "Let me get this for you ... for all your hard work."

At this point my mind starts racing. What!! I spend 5 hours on this already, and will probably spend another 4 more hours for a bottle of cleaner that cost $1.79. I probably also spent more than $7.00 in gas money! I thought all along that they were going to pay me. I'm pretty sure I talked to the old guy about my hourly rate, but he doesn't seem to be totally with it. Oh well! Live and learn! Be careful who you work for because you may get paid in cleaner ... or meatballs (Wedding Singer reference).

Becca said that I should have gotten a high-end cleaner like Oxy-clean. Pete keeps saying that I'm "Fantastic."

Delicious Dish!


Pete made me this Molten Chocolate Cake.

Here's the recipe!

4 oz semisweet chocolate, chopped
1/4 cup sugar
1/2 cup margarine (cut in pieces)
2 large eggs
1/4 cup heavy or whipping cream
2 large eggs yolks
1/2 teasponn vanilla extract
confectioners sugar
1/4 cup flour
whipped cream or ice cream (optional)


1. Preheat oven to 400 degrees F. Grease eight 6 oz custard cups. Dust with sugar.

2. In heavy 3-qt saucepan, combine chocolate, butter, and cream; heat over low heat, stirring occasionally, until butter and chocolate have melted and mixture is smooth. Remove pan from heat. Add vanilla. With wire whisk, stir in flour just until mixture is smooth.

3. In medium bowl, with mixer at high speed, beat granulated sugar, eggs, and yolks until thick and lemon-colored, about 10 minutes. fold egg mixture, one-third at a time, into chocolate mixture until blended.

4. Divide batter evenly among prepared custard cups. Place cups in jelly-roll pan for easier handling. Bake until edges of cakes are set but centers still jiggle, 8 to 9 minutes. Cool in pan on wire rack 3 minutes. Run thin knife around edges to loosen cakes from sides of cups; invert onto dessert plates. Dust with confectioners' sugar. Serve immediately with shipped cream or icecream, if desired.

Arrrrrrrgh! Ye Ole' Pirate Ships





We went to Morro Bay to see the ships. The one ship is the fancy english ship the 'Intercepter' from the first Pirates movie. (The Black Pearl was never an actual ship, but a set that was a barge at sea). Don't be fooled by the sunny pictures. It was FREEZING. We had to wait in line to walk on board and Phillip got really sick of us holding him and wanted to walk around the deck. This of course ended in a few tantrums. Once we were on board, Phillip liked it a little better. It was neat to walk around and take some cool pictures.

Phillip Gettting into Everything!





Phillip loves to discover new drawers and cupboards lately. If I can I put a hair elastic to keep him out. We did by all of that Child-Proofing gear, but seems like too much of a pain to drill holes into all of our drawers. He got into my big tub of bread flour. He also likes to play with the cocoa powder and corn meal, but as you can see he figured out how to open the corn meal container. Phillip likes to play in my shower as well. I would let him until now. A few days ago he poored bath soap all over the floor. It was a little too big of a mess to stop and take a picture.

He really likes the broom and the vacuum. He starts crying when you stop sweeping. He also likes it when I talk on the phone. He'll find my cell phone and say hi into it. He'll then realize that there is no one there. He'll keep giving me my cell phone until I call someone and he hears me talking on the phone again.

Christmas 2006





Phillip is turning into a little ham. He was a wise man for Christmas and looked great in the Alladin hat He loved seeing cousins and family. I think he would get a little too overwhelmed with some of the crazy family functions. In all, we had good times and noodle salad!

Monarch Butterfly Grove

My new crafty Craft!





Cheryl got me a fancy wreath to hang above our fireplace. I decided to try and copy the look. Pete and I picked Eucalyptus leaves from a nearby field. We visited a friend who had artichokes in their garden and picked up the dried ones. (They were $7 a piece in the store..!). I Dried some lavender from our front yard and added the eucalyptus berries. It was a fun project, but the smell was a little strong for phillip. He was sneezing a lot!

Happy Thanksgiving!





We had a happy HAPPY :-) It was a successful turkey day. We have a fridge and cooler full of leftovers. My 2nd turkey came out without a hitch. (I made a practice turkey last week). Now all we need to do is eat the leftovers :-)

Morro Bay




We went to a fun shell shop and found our special ornament for the year. A sand dollar :-)

Trip to Solvang



This is a fun little Danish community about an hour away from us. We loved the dollar restaurant (Custard's last stand). The Danish bakeries were fun. :-)
